Many of you have asked what kind of food I am eating these days...well here are a few things I've learned to love.

Cage Free Eggs (Organic Valley) - I sometimes make an omelet with veggies & Raw Whole Milk Cheese (Organic Valley)
Organic Black Beans & Brown Rice
14 Grain Cereal with Berries (4 times a week) (Wheat Berries, Buckwheat, Rye, Oat Groats, Millet, Sesame Seeds, Brown Rice, Flaxseed, Corn, Alfalfa Seeds, Lentils, Mung Beans, Barley and Almonds)
Trail Mix with Almonds, Walnuts and Organic Raisins (with no added sugar)

Guacamole Salad (recipe below - also at www.foodnetwork.com)
We eat fresh fish, grassfed beef, cage free chicken. A lot of organic fresh fruits & vegetables. We cook with mostly organic olive oil, coconut oil, garlic, butter, sea salt and fresh herbs... most of what we eat comes from Whole Foods, but Publix does carry some of the items listed above.
One of the best things I've ever eaten... sooooo good! (all cancer fighting ingredients)

Guacamole Salad
Ingredients
- 1 pint grape tomatoes, halved
- 1 yellow bell pepper, seeded and 1/2-inch diced (I left these out - not big fans of bell peppers)
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup small diced red onion (I used a spanish onion)
- 2 tablespoons minced jalapeno peppers, seeded (2 peppers)
- 1/2 teaspoon freshly grated lime zest
- 1/4 cup freshly squeezed lime juice (2 limes)
- 1/4 cup good olive oil
- 1 teaspoon kosher salt (I used sea salt)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground cayenne pepper
- 2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced
Directions
Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well. Just before you're ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature. makes 6 servings (I served it with chips)
